Herbed Eggplant Slices
serves 4
Ingredients
1 ea eggplant, sliced into 1/2-inch rounds
1 T fresh oregano, minced
1/4 C fresh basil, chopped
1/2 C fresh parsley, chopped
1 C bread crumbs
1 ea egg, beaten
1 C marina sauce, warmed
Instructions
Mix together the bread crumbs, oregano, basil and parsley.
Season each eggplant slice with salt and pepper. Dredge each slice through the egg, then the seasoned bread crumbs.
Bake on a lubricated baking sheet at 400 degrees until tops are slightly browned, then turn and continue baking until both sides are browned.
Plate and serve with the marinara.
